Clean Eating Rissole Recipe
Makes 8 rissoles
- 500g lean mince (any type)
- Half finely chopped capsicum
- Small finely chopped brown onion
- 1 grated carrot
- 1 grated zucchini
- 1 egg white
- 2 tsp. almond meal
Mix all ingredients in a bowl.
Take desired quantities of mixture and form patties
Cook on grill until brown and middle is well cooked.
NB1: The amounts of ingredients can be adjusted according to taste and you can substitute different vegetables if desired, just use extra egg white if the mixture is too dry or almond meal to help with binding.
NB2: You can also roll patties in Quinoa flakes to give a healthy, crunchy crust.
NB3: This recipe can also be stored in the fridge or freezer prior to cooking.
